Named after ?Professor? Jerry Thomas, an iconic 19th century bartender and cocktail pioneer, Vermouth del Professore is produced by a collaboration between Federico Ricatto, the historic producer Carlos Quaglia and the passionate Jerry Thomas Speakeasy in Rome. Del Professore Vermouth is one of few made solely from wine and ingredients produced in-house. Quaglia insists that this ensures the intensity and authenticity of the aromas within the vermouth, as they oversee the whole process from grape and herbs to the finished product. Composed of both red and white Italian base wines, Del Profressore Rosso Vermouth is aromatized with herbs and produce grown entirely within the vicinity of the distillery. A warm and soothing perfume of balsam and mint is balanced with aromas of bitter oils, orange zest, and vanilla. Full and soft on the palate with a pleasant balsamic character underlined by rhubarb and gentian which are met by a subtle sweetness and a light tannin structure from time spent in barrel.
