Wilderness Trail Straight Rye Whiskeys are offered as cask strength releases. After their sweet mash fermentation is distilled in column stills, it is barreled at the lowest known entry proof in Kentucky, alternating between 100 and 105 proof. The three-grain recipe is 56 percent rye, 33 percent corn and 11 percent malted barley. This mash bill was created for a broader balance of flavor to offset the more typical high ryes. Made from Kentucky-grown Heritage rye from a local KY Proud farm. The distillate is aged in new, air-dried #4 char, 53-gallon barrels and aged to maturity on the upper floors for a minimum of 4 years, with regular expressions expected to be between 6 and 8 years of age. On the nose it's bright with notes of lemon peel, baking spice, and new leather. As it opens up, things get more dessert-y with some vanilla custard and orange creamsicle. The brightness carries through to the palate with a big burst of orange citrus and clove. The mid-palate introduces a little chili pepper and some barrel char heading into a light, yet creamy, medium-length finish with lingering notes of flamed orange peel.
