Zeta is the Cebreros village entry-level wine, produced from over 60-year-old, organically-farmed, bush-trained garnacha vines. It offers a clear picture of the harmony and elegance of Cebreros garnacha, farmed by experienced hands. The slate and granite soils are blended in this bottling, lending depth and fruit character. The vineyards are Villaescusa, El Robledillo, El Moj?n, and El Presidente at 890m to 920m. Pegaso wines are made with low intervention and minimal sulfur at bottling. Vintage - A mild winter resulted in an early bud break, which caused significant loss of fruit from the massive frost event in March 2017. The summer was dry and hot with rainfall at the end of August, which was not enough to improve water deficiencies. All this led to an early harvest and one of the lowest yields of the last 15 years. Harvest of garnacha began in Cebreros on August 31. The result of a strict selection yielded lighter, fresh wines with good fruit and acidity for early drinking. Vinification - After a manual harvest, the wine is fermented with native yeasts and is aged six months in 500L French oak barrels of various origins and ages. It then spends a further six months in stainless steel tanks before bottling.
