The 2019 Chablis Les Preuses Grand Cru has an exquisite bouquet that is a little fuller and feels riper than the Bougros, hints of orange blossom and apricot infusing the citrus fruit, the flintiness only becoming more apparent with aeration. The palate is extremely well balanced, delivering the tension that you expect from a Chablis. Spicier notes of ginger and lemongrass surface toward the very cohesive finish, which feels a tad sweeter than Servin's other Grand Crus this vintage. Superb.
