Established in 1900, Domaine Paul Pillot is today one of the finest addresses in the Côte de Beaune, has been directed since 2004 by the young and dynamic Thierry Pillot. Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies…readers shouldn’t hesitate to buy whatever bottles they can find. In the cellar, Thierry employs a non-interventionist approach, allowing native yeasts to perform the barrel fermentation. The wines mature for 18 months – 12 months in oak and a further six months in stainless steel. This process results in wines with stunning depth of fruit, vibrant acidity, and well-integrated oak, showcasing their purity and intensity.
