2020 Domaine des Pasquiers - Cotes du Rhone
The perfect hamburger wine! Bold, spicy grenache from South France. Domiane des Pasquires happens to be a direct import of ours and their wines are the best-selling reds in the shop. And for good reason-they always overdeliver and are just plain delicious!
As far as burgers, everyone has their methods-but just make sure you use 80/20 (or even fattier) beef and I like to put a cast iron pan or griddle right on the grate as sometimes direct heat can cause too many flareups and you end up with hockey pucks….

2021 Domaine de Mourchon - Cotes du Rhone Seguret Loubie Rose
Another of our most requested direct imports, Mourchon is always delicious and just so darn easy to drink. This would be a go to for chicken.
Grilling chicken is challenging. My current favorite is to use a "Cornell" marinade (you can google it) and go direct heat -but I raise the grid to make sure the bird is not to close to the flame. I do a heavy baste throughout the cook. And just go with bone in skin on thighs…best part of the chicken and pretty good value to boot

2015 Chateau Panigon – Medoc
Not all Bordeaux is expensive wine meant for haut cuisine. This awesome value from the outstanding 2015 vintage is just what you need for a nice skirt or hangar steak (avoid flank -it's overpriced and not as good) with a simple marinade. Just a few minutes per side on direct heat. Boom!

2016 Gerin, Jean-Michel - VDP Syrah La Champine
I love this Syrah from Cote Rotie master Jean-Michel Gerin. With great freshness and a hint of smoky character this is the ticket for items from the smoker. I can go on all day about cooking brisket (will save that for another email) so I'll talk pulled pork. Pork shoulder is a good way to get started with your smoker as it's a very forgiving cut. Keep it simple-apply your favorite rub, run the smoker between 225-250 and if you have loads of time don't wrap it. But his can be a 14-16 hr cook! To get it done quicker wrap in foil when it hit about 160 IT and let it go until it's super tender (it should feel like butter when you insert your temperature probe).

2019 Ridge - Zinfandel California Three Valleys
Nothing like a great Zin with some smoky (not too smoky!) Spare ribs. Ridge is my favorite USA producer and their wines always have new world personality with old world sensibility. They are just downright fun to drink!
When it comes to cooking ribs I prefer St. Louis cut spares and I've decided over the years to go easy on the dry rub (lately I've been doing just salt, pepper and garlic). DO NOT do the 3-2-1 method unless you want them to be overcooked! I prefer 3 hours or so unwrapped and about an hour wrapped… then sauce em and put them back on the smoker to set up.
