Force & Grace is a portfolio of wines founded by vintner Joseph Carr who, after creating Josh Cellars, continued following his passion for making the finest wines to exacting standards.
This Paso Robles Cabernet Sauvignon is dense yet delicately textured. In the glass, it offers concentrated ripe black cherry, raspberry fruit leather, cassis, and velvety tannins that complement the rich fruit beautifully. The finish is persistent yet wonderfully harmonious, with layers of berries, caramel, and notes of lingering blonde tobacco.
For this wine, we picked fruit from four distinct eastern appellations of Paso Robles, each featuring a diverse range of ocean influence, rainfall, elevation, exposures, and soils. Our vineyards in the more northern regions provide lighter, fruitier styles, while vineyards in the south yield wines with more color and structure, allowing us to build layers of flavor and texture throughout the blend.
We pick our fruit at night, sort the fruit at the winery to keep on the best berries, and age our wine for 18 months in 40% new French oak, helping to harmonize the fruit and tannins and lend a softer, sweeter mouthfeel.
Winemakers Notes
2021 Force & Grace Paso Robles Cabernet Sauvignon
A really lovely, restrained effort from Paso Robles by Jean Hoefliger. Not to say the wine isn't powerful, full-bodied, or richly layered with a tapestry of inky dark black and blue fruit. It is all that, but immense structure and building tannins also create freshness and energy. Most fruit sources are from east Paso. Hoefliger had to pick specific sites earlier to avoid overripe flavors, and he left a good portion on the skins for almost 35 days to build a tannin structure.
