Joseph Drouhin farms 0.33 hectares here, with vines averaging around thirty years of age. The grapes are hand harvested in small open crates to protect the fruit, then undergo two to three weeks of maceration and fermentation with indigenous yeasts in small open vats, marked by regular punching down and pumping over.
