They work at the source of some of the country’s most talked-about Malbec. Inseparable comes from the Monasterio vineyard, planted around 2010 by the monks of the Cristo Orante monastery high in Gualtallary, at about 1,400 meters in the Uco Valley. The vines grow in calcium-rich sand and gravel, which gives the wine its chalky texture. The grapes are picked by hand and fermented with native yeasts in concrete, with a 30-day maceration. The wine then ages a year in the same tanks, with no oak, and is bottled unfined and unfiltered. Expect violet, lavender, plum, blueberry and red cherry, with mountain herbs and pink peppercorn. It’s built on acidity rather than weight, with fine, chalky tannins and a long, savory finish.
