After a short cold maceration in steel, the must settles before undergoing spontaneous fermentation in concrete tanks at a controlled 17 degrees Celsius over roughly 25 days. The wine then spends ten months refining in steel and a further seven months resting in bottle before release, at around 14 percent alcohol.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe wine pours a clear, intense yellow and opens with layered aromas of pear, peach, acacia blossom, and hawthorn, rounded out by a hint of honey.
