akashi-tai-junmai-tokubetsu-300ml
Akashi-Tai Junmai Tokubetsu (300ml)

Akashi-Tai has been brewed by the Yonezawa family in Akashi, a city on Japan's Hyogo coast, since 1856, making it one of the longer running names in Japanese sake. The brand takes its name from the tai, or sea bream, the emblem of Akashi City, and every batch is still overseen by toji Kimio Yonezawa, the same master brewer behind the family's Hatozaki whisky and 135 East gin.

Tokubetsu Honjozo is brewed from Gohyakumangoku rice milled down to 60 percent of its original size, removing 40 percent of the outer grain, which is enough polishing to earn the tokubetsu, or special, designation. As with any honjozo, a small amount of brewing alcohol is added just before filtration, a step that lifts and intensifies the aromas developed during fermentation without pushing the sake toward the fuller style of a junmai. The result is a lighter bodied sake meant to drink easily at almost any serving temperature.

The nose is mild, with toasted cereal grain, steamed rice, and light touches of soy and straw. The palate stays light in body with hints of lemon and hay, finishing quick, clean, and crisp. A faint creaminess lingers just beneath the surface.
