2018 Melanie Pfister - Breit Extra Brut
The acronym Breit comes from Hangenbriete, the name of the vineyard. The appellation rules for this wine were promulgated in 1976, and Mélanie's father started making crémant in the early 1980s. From the first, he worked with a long aging period. Today, the Pfisters consistently make an unusually elegant, perfumed, top-end crémant. The wine rests on its lees for a minimum of twenty-four months (most French crémant, regardless of origin, ages on its lees for about nine months or so). There are three to four disgorgements of a given year's production, and what you're drinking could have aged as long as thirty-six months on its lees. This is a single-vintage wine without any older reserve wine, but the vintage is kept discreetly on the back label rather than printed on the front because of the multiple disgorgements.

2019 Chateau Marie Plaisance - Bergerac Blanc Sec Le Brin
60%Semillon,35%Sauvignon,5% Muscadelle. A beguiling white, raised in steel, with a fresh, clean nose and a succulent middle thanks to the Semillon. Annual production is just over 4,000 cases.

2018 Domaine des Huards - Cour-Cheverny Blanc Romo
This is the new Romorantin, decidedly not what was generally found a generation ago (which tended to be an acid, austere wine often with oxidative notes). This cuvée has a remarkable nose, akin to high-toned Riesling for some and Loire Chenin for others—a dense wine with layers of flavors reminiscent of apricots and baked apples and other autumn fruits. Bracing, lifted, long, and altogether distinctive. Vines average 35 years of age; the wine is raised in tank on its fine lees and bottled in the spring following harvest, usually before malolactic has a chance to take place.

2018 Domaine des Huards - Cheverny Rouge Envol
50/50 Pinot Noir and Gamay. A terrific vin de soif and such a pleasure to drink. It has the joy of Gamay and the seriousness of Pinot—the juicy nose and the soulful depths. Vines average 30 years of age; the wine is raised in tank on its fine lees and bottled in the spring following harvest. Malolactic tends to happen with the reds chez Huards.

2018 Mas d'Amile - Languedoc-Montpeyroux
Based on about 60% Grenache with roughly equal parts Carignan, Mourvèdre and Syrah. The grapes are de-stemmed and the élevage is half in foudre and half in neutral barrels for roughly 18 months. The SO2 additions are typically the same as for the Petitou above. An elegant, long and savory wine that is best decanted. Production averages 3,500-4,000 bottles.

2017 Ruggeri Corsini - Barolo DOCG San Pietro
From just over 3 acres of vines growing rather high on the hillside at a southeastern exposure in thin, sandy topsoil. The most traditional of the farm's Barolos, aged strictly in large old Slavonian oak casks (the forests are in Croatia) known as botte, or foudre in French. There is often a chalky minerality in this wine. Roughly 500 cases annually.
