Mitchell & Son was founded in Dublin in 1805 as a wine merchant, and by the late 19th century the family had expanded into whiskey bonding, sending empty wine, sherry, and port casks to the nearby Jameson Distillery to be filled with new spirit and returned to mature in their own cellar warehouse. It was there that the tradition of marking barrels with a dab of colored paint to track age began, giving rise to the Spot range, of which Green Spot became the most enduring and best known. The brand remains a family label today, produced under contract at Midleton Distillery in County Cork, and has long been favored by Dublin literary figures, including the writer Samuel Beckett.

Green Spot is a single pot still Irish whiskey, meaning it is distilled from a mash of both malted and unmalted barley rather than malted barley alone, giving it a fuller, spicier profile than a single malt. It is triple distilled in traditional copper pot stills at Midleton, then matured in a combination of ex-bourbon American oak casks and ex-sherry European oak casks. The whiskey released under the Green Spot name is a non-age-statement blend drawn from casks aged roughly seven to ten years, vatted together and bottled in relatively small quantities to preserve consistency across releases.

On the nose, look for orchard fruit and barley aromas layered over toasted wood and warm spice. The palate is full-bodied and spicy, with green apple and a touch of clove giving way to a rounded, honeyed sweetness, while the finish lingers with barley and spice notes well after the last sip. Its structure and spice make it a natural match for roast pork, aged cheddar, or a simple apple tart.
