Sorbara is the lightest-colored, highest-acid member of the Lambrusco family — exactly what's needed to make an elegant, age-worthy Metodo Classico rather than a simple fizzy red. Fermented a second time in bottle and aged extensively on the lees, the 2017 shows the house's signature: bright ruby color, vibrant red cherry and wild strawberry fruit, a touch of blood orange and tangerine zest, fine persistent bubbles, and a bone-dry, food-friendly finish.
