Christian Bellei trained in Champagne before returning to his family's historic riverside winery to apply true Metodo Classico to Lambrusco di Sorbara — the lightest-colored, highest-acid, lowest-tannin member of the Lambrusco family, ideally suited to fine sparkling production. Grown on calcareous, chalk-rich soils strikingly similar to Champagne's own, hand-harvested and gently pressed with a brief skin maceration for color, the 2020 spent a minimum of 42 months aging on the lees before disgorgement. Expect a bright, delicate pink hue with aromas of currant, raspberry, wild strawberry, and rose petal, carried by fine, persistent bubbles and a refreshing, food-friendly finish. Served on the by-the-glass list at Osteria Francescana — proof this isn't your everyday Lambrusco.
