Bottled outside strict regional denominazione boundaries to protect viticultural standards, Roberto Anselmi’s 2023 Capitel Foscarino captures concentrated high-altitude acidity and minerality from steep limestone and volcanic slopes. Cultivated on a ten-hectare, south-facing cru at 350 meters above sea level near Monteforte d’Alpone, the vineyard’s fast-draining soils naturally limit yield and drive flavor complexity in every cluster.
The wine combines classic local Garganega with a measured portion of Chardonnay. Harvested in two hand-sorting passes to balance sugar and tartaric acid levels, the fruit rests in cold soak before gentle pressing. Fermentation occurs at controlled low temperatures, after which the wine spends six months aging on its lees in stainless steel tanks, followed by extended bottle rest to stabilize mouthfeel without barrel influence.

A bright straw appearance edged in pale gold precedes an aromatic sequence of wildflower honey, dried apple skin, and sun-dried apricot. Fine traces of cracked white pepper and pulverized stone layer into a dry, medium-full palate marked by sharp acid structure, pronounced chalky minerality, and a lingering saline finish.
