Today, Dauphin Grosjean’s sons tend a dedicated half-hectare plot called Vigne Rovettaz, where roots dive into nutrient-rich sandy glacial moraine. Harvested by hand, the destemmed berries undergo spontaneous fermentation in wooden vats for approximately fourteen days.
