NV Chandon - Brut California (750ml)
Domaine Chandon was founded in 1973 in Yountville by Moët et Chandon, making it the first French-owned sparkling wine house in Napa Valley. The winery helped establish California's reputation for traditional method sparkling wine and remains part of the LVMH portfolio today. Winemaker Pauline Lhote now leads production, continuing Chandon's focus on blending fruit from multiple cool-climate California appellations into a consistent, approachable house style.
This non-vintage Brut is led by Chardonnay, rounded out with Pinot Noir and a touch of Pinot Meunier. Grapes are picked at night to keep them cool and preserve acidity, then gently pressed to limit skin contact. Primary fermentation happens in stainless steel, and the final blend is assembled from multiple vintages of base wine before at least twelve months of aging to build creamy complexity.
This Brut opens with aromas of green apple, ripe pear, and citrus, layered with hints of biscuit, almond, and white flowers. Fine, persistent bubbles carry a soft, harmonious palate through to a dry finish. It's versatile at the table, pairing nicely with fried chicken, seafood pasta, or a simple cheese course.
