Domaine Joseph Voillot has been rooted in the village of Volnay for six generations, tracing back to the original Joseph Voillot, who founded the estate in the 1840s while sharecropping vineyard parcels and farming a variety of crops. Successive generations expanded the holdings, and today the domaine is guided by Etienne Chaix, grandson of Joseph and nephew of longtime winemaker Jean-Pierre Charlot, who remains involved when needed. The estate farms about nine hectares spread across Meursault, Volnay, Pommard, and Beaune, using reasoned, environmentally minded viticulture that has earned it High Environmental Value certification, all while staying true to the traditions passed down through the family.

Les Pézerolles sits on a mid-slope terroir in Pommard, with shallow soil composed of Bathonian limestone and Argovian marl that gives the wine both finesse and real structural power. The vines here date to 1963, old enough to bring concentration and depth to the fruit without sacrificing precision. Vinification follows the same careful, low intervention approach applied across all of Voillot's premier cru parcels, letting the differences between sites, rather than heavy handed winemaking, define each wine's character.

The 2018 shows a deep purple color and an intense, complex bouquet built around kirsch and dark cherry, layered with the site's characteristic minerality. On the palate it carries a solid, well knit structure with fine tannins and enough power to suggest real aging potential, likely to develop well over the next decade. Its depth and gamey undertones make it a natural match for duck, roasted game birds, or a hearty venison stew.
