Harvested from 30-to-60-year-old organic Sangiovese vines rooted in marine blue clay, the 2021 Poliziano Vino Nobile di Montepulciano Asinone is the estate’s flagshipsingle-vineyard release. Cultivated across 12 hectares just south of the town of Montepulciano, the harvest ferments and matures in French oak tonneaux instead of smaller barriques. Roughly half the vessels are newly replaced, enabling the wine to develop a wide, seamless tannic matrix without heavy woody spice. The vintage delivers a darkly floral and intensely concentrated aroma profile. Crushed blackberry and sweet cherry overlap with grounded traces of ashen stone and dried sage. A sleek, cool-toned palate channels tart wild berry and violet characteristics through a firm, chewy center, culminating in a long, mouthwatering close. Originally isolated for separate bottling in 1983, Asinone has consistently been formulated for medium to extended aging, gaining tertiary complexity and softened texture as the primary barrel characters settle.

This structurally driven, earth-forward red aligns best with dense proteins and rustic preparations. Grilled venison medallions, slow-cooked wild boar ragù, and grated aged Pecorino Toscano counterbalance the wine’s savory herbal undertones and gripping acidity. Pull the bottle 30 to 45 minutes ahead of service and pour through a breathable decanter to relax the edgy tannins and unlock the full aromatic spectrum.

lively nature here. Poliziano has been drastically reducing its use of
barriques in favor of tonneaux and large casks, and it really shows here.
