Stainless-fermented farmhouse ale brewed with barley, spelt, wheat and rye. We open ferment Melancholia to create more expressive yeast esters and enhance phenols. Coupled with an effervescent carbonation, this is a beautiful interpretation  of a classic Saison. Notes of bubblegum, banana, pear, clove and cracked pepper.
