Yuki No Bosha Junmai Ginjo Cabin in the Snow (720ml)
Yuki No Bosha is produced by Saiya Brewery, founded in 1903 in Akita Prefecture at the foothills of Mount Chokai. The sake's name translates literally to "Cabin in the Snow," a fitting description of the brewery during the coldest winter months, when the entire kura becomes buried in snow. That extreme cold slows fermentation dramatically, often stretching the process to six to ten times longer than breweries in milder regions, a patience that shapes the sake's soft, layered character.
The brewery's brewmaster, honored by Japan's Emperor as a master craftsman, developed a proprietary blend of twelve different yeast strains for this label, some derived from fruits like apples and strawberries. Combined with rice milled down to 50 percent, technically daiginjo territory despite the junmai ginjo label, this careful approach produces a sake with unusual depth for its style.
The nose carries anise alongside strawberry, peach, and white floral notes, while the palate moves through mango and strawberry before finishing with a touch of white pepper spice. It stays clear, soft, and elegant throughout, with just enough acidity to keep it food-friendly rather than overly sweet. Try it chilled with spicy dishes or a light fruit and cheese plate.
