Harvested during the historically celebrated 1966 vintage, Maynard’s Porto Colheita matures exclusively in seasoned Portuguese wooden casks before transfer to bottle. This deliberate oxidative process transforms fresh grape sugars into concentrated layers of candied kumquat, blackstrap molasses, poached quince, and crushed walnut. Secondary aromas of beeswax, dried lavender, and cedar weave through a backbone of bright, vineyard-sourced acidity that keeps the heavy fortified body remarkably balanced.

Serve at 14–16 °C to maintain aromatic clarity. Decanting for fifteen to twenty minutes allows volatile alcohol edges to settle and reveals deeper notes of cocoa powder and toasted almond. The wine integrates seamlessly with hard, crystalline cheeses like aged Gouda or Roquefort, buttery crostini topped with fig jam, or plain dark sesame snacks. Because the prolonged oak residence has already extracted and softened all structural tannins, avoid aggressive cooling or dilution with ice, which dulls the residual sweetness and compresses the finish.

Orient the bottle vertically once opened and store in a cool, dark environment. The high alcohol content and oxidative character preserve flavor integrity for approximately five weeks after cork removal. Pour 50 ml portions to fully appreciate the transition from initial caramel richness to a lingering, lightly drying spice finish.
