Terroir and farming

Older vines in the Clos des Capucins monopole sit on sand-silt soil with granite pebbles, a terroir that accelerates ripening and yields wines with complex aromatics and concentrated depth. The vineyard is farmed organically and biodynamically (Ecocert & Demeter certified), with short pruning to keep yields low. Grapes are hand-picked at optimum maturity to maximize aromatic expression and body.

Winemaking

Gently pressed in whole clusters using pneumatic presses, the wine ferments with indigenous yeasts in old oak vats, allowing the terroir to guide depth and nuance without overpowering fruit.

Tasting notes

Delicate pear and peach fruit surface amid empyreumatic and buttery notes. This Pinot Gris remains light- to medium-bodied, achieving a pure balance between a touch of sweetness and bright acidity, culminating in a long, mouth-watering finish.

Food pairing
