  • Terroir: Older vines (60 years) in the monopole Clos des Capucins, with sand-silt soil on granite pebbles. This combination yields wines with early ripening, complex aromatics, and heightened concentration.
  • Farming: Organic and Biodynamic (certified by Ecocert & Demeter); short pruning to maintain low yields and dense fruit expression.
  • Picking & Winemaking: Hand-picked at optimum maturity; gently pressed in whole clusters in pneumatic presses; fermentation with indigenous yeasts in old oak vats; aged in old foudres (neutral oak) with 0 months in active barrel aging.
