One of Piedmont's most original and irresistible wines, Clare JC is Vajra's revival of a Nebbiolo style described in an old reference by Gian Battista Croce, jeweler to the House of Savoy, and connected to the tasting lore of Thomas Jefferson, who reportedly sampled Nebbiolo sparkles during his visit to Piedmont. The wine’s name, Clare JC, honors Jefferson (J) and Croce (C) as part of this historic revival.
About 20% whole clusters are placed at the bottom of the vat, with the rest of the crushed fruit added on top, and the mixture ferments spontaneously. The must is then transferred to an autoclave where trapped CO2 leaves the wine just barely frizzante—the way wines were before stabilization.
Light in color and weight, with a hint of wild rusticity and a spritz of carbonic fizz, Clare JC is an easy-drinking wine that tends to disappear quickly when shared with friends, especially when chilled in warm weather.
