Woodinville Whiskey Company was founded in 2010 in Woodinville, Washington, and was later acquired by Moët Hennessy in 2017, bringing significant investment behind its grain-to-glass philosophy. The distillery grows its rye exclusively on the Omlin family farm in Quincy, Washington, and handles every stage of production in-house, from milling and fermenting through distillation in a 1,320-gallon hybrid copper pot still.

Woodinville Straight Rye is built from a 100 percent rye mash bill with no malted rye or other grains, relying on an external enzyme to convert starch to sugar during fermentation. After distillation, the whiskey is trucked back across the Cascade Mountains to private barrel houses, where the region's dramatic seasonal temperature swings accelerate flavor extraction from heavily toasted, charred American oak. It matures a minimum of five years before bottling at 90 proof.

The nose brings caramel sweetness together with cinnamon, clove, and dried fruit leather, a richness that belies the austerity often associated with all-rye mash bills. On the palate, rye spice and black pepper are balanced by vanilla, toffee, and honey pulled from the wood, giving the whiskey a rounder profile than its grain bill alone would suggest. The finish runs medium in length, dry and warm, with lingering oak spice that closes things out cleanly.
