Fee Brothers Plum Bitters 5oz
Fee Brothers has produced bitters, syrups, and bar mixes from its Rochester, New York headquarters since 1864, making it one of the longest-running bitters houses in the United States. The company remains family owned and operated into its fourth generation, having grown from a small local business into one of the country's larger suppliers of bar mixes and flavorings for restaurants and coffee shops. Alongside staples like orange and old fashioned bitters, Fee Brothers has continued producing less conventional styles such as plum, keeping alive flavors that were once more common in historic bar books.
Fee Brothers Plum Bitters is a glycerin-based, low-proof bitters built around natural plum flavor blended with a mix of natural and artificial spice extracts. The formula leans on warming baking spices such as cinnamon, clove, and nutmeg to round out the fruit, giving the finished product a slightly hazy, golden amber appearance.
The aroma is pungent with ripe plum and cinnamon, while the palate turns bittersweet, layering cooked plum and cherry-like fruit against clove, anise, and a heavy dose of warming spice. Some tasters note a faint bitter quinine edge underneath the fruit, giving the bitters a structured, slightly tannic backbone rather than straightforward sweetness. The finish lingers on plum and cinnamon, evoking something close to a spiced fruit pudding.
