What began as a bar-side project making tinctures from scratch grew into a full lineup of artisanal bitters, salts, and other bar provisions, all still made in relatively small runs. Burks approaches each bitters flavor the way a cook treats a spice rack, building formulas meant to reshape a cocktail rather than simply season it, and the brand has become known across San Francisco Bay Area bars for its distinctive, sometimes intense flavor profiles.
Orange Bitters is built from mountain spring water, organic alcohol, and organic bitter orange peel, along with a small set of undisclosed herbs and spices that round out the citrus core. As with the rest of the King Floyd's line, the ingredients are hand ground before being percolated and macerated for up to two months, with the batch stirred and tasted regularly to pull out a full, concentrated extraction. Once the flavor reaches the desired intensity, the bitters are filtered and bottled, yielding a formula with notably more bite than many commercial orange bitters.
The nose leans strongly citrus forward, with bright bitter orange and occasional floral lift reminiscent of triple sec. The palate shifts into something firmer, delivering an intense, assertive bitterness anchored by orange peel and warm baking spice, with gingerbread and nutmeg notes running underneath. The finish is long and pungent, carrying real staying power, so a light hand goes further here than with milder orange bitters.
