Sophie Guillemot-Michel Marc de Bourgogne Brandy 750ml
Domaine Guillemot-Michel is a small, family-run estate in the hamlet of Quintaine, within the Viré-Clessé appellation of the Mâconnais. Marc and Pierrette Guillemot-Michel were early pioneers of biodynamic viticulture in Burgundy back in the early 1990s, and their daughter Sophie now works the domaine full time alongside her husband, Gautier. Best known for pure, energetic Chardonnay wines, the family also produces small quantities of Marc de Bourgogne, a traditional Burgundian eau de vie that has become increasingly rare.
This marc is distilled entirely from the skins of certified biodynamic Chardonnay grapes, picked from vines averaging around fifty five years old and destemmed before fermentation. The pressed skins are distilled roughly a month after harvest in the estate's two traditional copper stills, then rest for two to four years in old oak barrels sourced from other biodynamic Burgundy producers. Those barrels previously held white wine for up to a decade, lending complexity and aroma without imparting heavy tannin.
The finished spirit shows aromas of almond, vanilla, and caramel, layered with lemon peel, honey, and gentle floral spice. On the palate it is creamy and round, with real complexity and an elegant, lingering warmth that carries through a smooth finish.
