The Droin family traces its Chablis roots back to 1620, and Neal Martin has gone so far as to name them alongside Raveneau and Dauvissat as one of the great exponents of the appellation. Traditionalists to the core, they source this village Chablis from thirty plots in Courgis and Fleys, all on ancient Kimmeridgian limestone laced with fossilized oyster shells — the soil that gives real Chablis its saline cut. Fermented and aged entirely in tank to preserve purity, this is a benchmark village bottling: crisp and focused, with pressed white flowers, wet stone, white peach, and apricot over a precise, mineral-driven finish. More density and structure than you'd expect at this level. Very capable of aging.
