Domaine Servin traces its history back to 1640 and today farms some thirty-seven hectares across Chablis, from Petit Chablis up through four grand crus: Blanchots, Bougros, Les Clos, and Les Preuses. François Servin, a committed traditionalist, continues the style favored by his grandfather, aiming for full-bodied wines built to age gracefully over decades, while his Australian son-in-law and winemaker, Marc Cameron, helps guide the cellar work.

Les Preuses is widely considered the finest of Chablis's grand crus, sitting higher on the slope with better drainage and more hours of sunshine than its neighbors. The Kimmeridgian limestone soils that define the appellation give the wine its characteristic minerality. The 2022 vintage was matured entirely in used barrels, the youngest two years old, allowing the fruit and terroir to speak without added oak character.

The nose shows green apple, sea spray, and wet limestone, with a subtle grilled hazelnut note emerging over time. The palate is well balanced, opening with a honeyed richness before citrus peel and orange pith take hold, fanning out to a long, persistent finish. Pair it with grilled sole, crab cakes, or young Cantal cheese.

"The 2022 Chablis Les Preuses Grand Cru is matured entirely in used

barrels, the youngest two years old. The nose has a very appealing

sense of cohesion, a subtle grilled hazelnut scent coming through with

time. The palate is well-balanced with a slightly honeyed entry, citrus

peel and orange pith. It fans out impressively towards the nish and

feels very persistent in the mouth. This will tangle with the Bougros for

supremacy once in bottle.
