The Droin family traces its Chablis roots back to 1620, and Neal Martin has named them alongside Raveneau and Dauvissat among the great exponents of the appellation. Traditionalists to the core, they source this village Chablis from some twenty to thirty plots in Courgis and Fleys, all on ancient Kimmeridgian limestone laced with fossilized oyster shells — the soil that gives real Chablis its saline cut. Fermented and aged entirely in tank to preserve purity, the 2023 is a faithful and delicious reflection of the vintage: ripe white peach and nectarine, a hint of hawthorn flower, and iodine over a satiny, seamless palate with more finesse than the Petit Chablis and a sapid, mineral finish. Lovely young, but a couple years in bottle will bring the classic Chablis minerality forward.
