One of Chablis' most distinctive village-level bottlings — sourced from a single 60-year-old parcel in Les Pargues that was originally slated for premier cru classification before being left out of the final appellation map. Servin has been farming this site by massale selection since before it was fashionable: François Servin explains his father planted exclusively this way because "clones were too expensive," resulting in a field blend of genetically diverse vines that produce lower yields and more aromatic complexity than clone-planted neighbors. In 2024, Servin was fortunate to escape hail, but rain and flowering disruption still reduced production by 75% across the estate. The resulting wine is lean and precise in the 2024 style — lightly tropical, perfumed, and delicate, with Chablis' signature minerality running through a clean, focused finish.
