Force & Grace is a Paso Robles project helmed by winemaker Jean Hoefliger, working in a region whose Cabernet Sauvignon potential was first recognized by the legendary consultant Andre Tchelistcheff back in the early 1960s. Since then Paso has grown into California's leading address for the variety, and Force & Grace draws its fruit primarily from vineyards on the region's east side, where calcareous soils and wide swings between day and night temperatures help build ripe, concentrated grapes.

To preserve freshness, Hoefliger picks specific blocks early, before the fruit turns overripe, then leaves a good portion of the grapes on their skins for almost thirty-five days to develop a firm tannin structure. The resulting wine is deep garnet-purple in the glass, full-bodied and richly layered, with immense structure balanced by real energy and lift.

On the nose, stewed plum, fruitcake, and baked blackcurrant give way to tobacco leaf, dried herbs, and a savory whiff of tree bark. The medium to full-bodied palate carries dense black fruit and a lightly chewy texture through to a long, savory finish. It's a natural companion to grilled steak, braised short ribs, or a plate of aged cheddar.

"A really lovely, restrained effort from Paso Robles by Jean Hoefliger. Not to say the wine isn't powerful, full-bodied, or richly layered with a tapestry of inky dark black and blue fruit. It is all that, but immense structure and building tannins also create freshness and energy. Most fruit sources are from east Paso. Hoefliger had to pick specific sites earlier to avoid overripe flavors, and he left a good portion on the skins for almost 35 days to build a tannin structure."
