2023 Textbook - Cabernet Sauvignon Paso Robles (750ml)
Textbook was founded by the Pey family, whose travels through Italy and the rest of Europe shaped a philosophy they call power with restraint, layering California's intensity with old-world polish. Winemaker Abigail Estrada now carries that vision forward alongside founder Jonathan Pey, extending the label from its Napa Valley roots into Paso Robles Cabernet Sauvignon.
This bottling is a blend of ninety-five percent Cabernet Sauvignon and five percent Petite Sirah, sourced from four Paso Robles sub-districts, including the warmer Estrella District and the cooler, marine-influenced El Pomar District near the Templeton Gap. A wet winter and cool spring stretched out the 2023 growing season, giving the fruit extra hang time to build flavor without losing acidity. Individual lots were aged separately in French oak for months before being hand-selected into the final blend.
The wine opens with Satsuma plum, red currant, and anise, dusted with baking spice, then moves into juicy black cherry, raspberry, and milk chocolate. Smooth, well-integrated tannins give it a rich, opulent finish without heaviness. Serve it alongside Santa Maria-style grilled tri-tip, roasted root vegetables, or aged provolone.
