2023 Etienne Sauzet - Bourgogne Hautes Cotes de Beaune Jardin du Calvaire (750ml)

Domaine Etienne Sauzet traces back to the early twentieth century, when its namesake inherited and acquired a handful of choice plots in Puligny-Montrachet. The estate passed to his granddaughter, Jeanine Boillot, and her husband Gérard Boudot, who modernized the winemaking while holding onto older traditions like extended lees aging. Today their daughter Emilie and her husband, Benoît Riffault, run the domaine, farming biodynamically and continuing to build on Sauzet's reputation for some of Burgundy's most sought-after white wines.

Jardin du Calvaire sits at the end of a notoriously steep path, the route du Calvaire, at 450 meters, on a small parcel owned personally by Emilie and Benoît. Grapes are hand-picked and sorted, then fermented with native yeasts in stainless steel for around three weeks. The wine spends twelve to fifteen months in French oak, with only fifteen percent new, before a further rest in tank ahead of bottling.

The result is crisp and taut, with green apple, bright lime, and delicate floral lift over a mineral undertone, joined by hints of white pepper and vanilla. Mouth-watering acidity keeps everything balanced. Try it with grilled sea bass, fresh chèvre, or a simple herb salad.
