Domaine Hubert Lamy was founded in the mid-1970s in the village of Saint-Aubin. His son Olivier joined the cellar in 1995 and, after training at Domaine Méo-Camuzet, transformed the estate, converting the vineyards to organic farming and pioneering high-density plantings that force the vines to compete for nutrients. Today the domaine farms parcels across Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay, and is widely regarded as one of the finest addresses in the Côte de Beaune.

Les Frionnes is drawn from five separate holdings totaling under three hectares, with vines planted at various points between the 1930s and the early 2000s. The soil is largely white marl over limestone, similar in character to the terroir of Chablis. The wine ferments and ages in large oak barrels rather than small ones, a choice that lets the fruit and the site's minerality come through with minimal oak influence.

The nose is bright with pear, citrus blossom, ripe lemon and fresh almond, backed by a distinct scent of wet stone and chalk. The palate is medium bodied, taut and chiseled, with crisp acidity carrying the flavors to a long, saline finish. It has real tension and energy in the glass. Pour it with raw oysters, sushi, or fresh goat cheese.
