Hubert Lamy founded this domaine in Saint-Aubin decades ago, but it is his son Olivier who has shaped its modern reputation. Since taking over the cellar, Olivier has pushed the estate toward organic and biodynamic farming, low yields, and unusually dense vine spacing, and his painstaking, plot-by-plot approach has helped raise Saint-Aubin's profile alongside its costlier neighbors in Puligny and Chassagne.

This bottling draws on ten separate parcels around the village, mostly planted in the 1980s on the stony clay-limestone soils typical of Saint-Aubin. Yields are kept low, the fruit is picked entirely by hand, and fermentation begins with native yeasts. The wine then ages patiently in oak barrels, with only a small portion of new wood, a method meant to preserve freshness and let the site speak clearly.

The wine offers aromas of ripe pear, white flowers and freshly baked bread, with a streak of citrus zest and a dusting of chalk underneath. On the palate it is medium bodied, bright and racy, layered and chalky in texture, finishing long and precise. It carries real tension without feeling austere. Try it with roasted sole, steamed shellfish, or a citrus-dressed salad.
