2024 Chantereves - Bourgogne Blanc Yume Utai (750ml)
Chanterêves is the work of Tomoko Kuriyama and Guillaume Bott, a husband-and-wife team who founded their micro-négoce in Savigny-lès-Beaune. Farming organically and biodynamically across the parcels they source, the pair are known for a light-touch approach to winemaking, letting Chardonnay show its site rather than dressing it up in heavy oak. The name Yume Utai, Japanese for roughly a song of dreams, gives a fitting poetic frame to what is essentially the house's entry-level white.
First produced in 2024 as a replacement for the domaine's earlier Bourgogne Blanc cuvée, Yume Utai draws two-thirds of its fruit from Maranges and one-third from the Pierres Dorées area of southern Beaujolais, both on fossiliferous, Bajocian limestone soils. The grapes are crushed and pressed slowly over six hours, then fermented with ambient yeast using a pied de cuve starter. Aging runs ten to twelve months in a mix of 228 and 600-liter barrels, followed by several more months on fine lees in stainless steel, with minimal sulfur and little fining or filtration.
The wine shows white peach, lemon peel, and crushed stone, with a saline edge running through a long, mineral finish. Try it with grilled trout, a creamy pasta, or young Saint-Marcellin.
