Chateau Montifaud X.O. Petite Champagne Cognac 750ml
Château de Montifaud has belonged to the Vallet family since 1837, when Augustin Vallet established the estate. Now in its sixth generation under Louis, Michel, and Laurent Vallet, the family farms roughly 125 hectares across both Grande and Petite Champagne, but deliberately keeps the two crus separate rather than blending them, allowing each terroir to speak on its own in the finished cognac.
This X.O. is built entirely from Petite Champagne fruit, drawing on eaux-de-vie that can run to nearly thirty years of age. The Vallets crush the grapes immediately on arrival to limit oxidation, ferment at cool, controlled temperatures to preserve floral character, then distill on the lees for added richness. The spirit matures first in red oak barrels before a second aging in older casks, a two-stage process the family oversees personally at every step, from vineyard to bottle.
The color is coppery with amber highlights. On the nose, dried fruit and toasted almond lead, backed by hazelnut and a delicate, non-tannic sweetness typical of Petite Champagne's chalky soil. The palate carries that same fruit character through to a long, complex finish with a fine rancio. It is best served in a wide balloon glass, warmed gently in the hand to open its aromatics fully.
