Jean Fillioux Tres Vieux Extra Cognac 700ml
Maison Jean Fillioux dates back to 1880, when Honoré Fillioux bought a small twenty-hectare estate in Grande Champagne, and in 1894 the family acquired Domaine de la Pouyage, sitting within the so-called golden triangle at the heart of the appellation. Now guided by fifth-generation family members Pascal and Christophe Fillioux, the estate handles every stage of production itself, from growing Ugni Blanc grapes to fermenting, distilling, and patiently aging the resulting eaux-de-vie.
Très Vieux Extra is made entirely from estate-grown Ugni Blanc, harvested each October and pressed quickly to preserve the high acidity and low tannin that make the wine well suited to distillation. The wine is double distilled in traditional Charentais pot stills, then aged a minimum of twenty-five years in a mix of new and used French oak, mostly Limousin. The Filliouxs are known for their hands-on approach during maturation, tasting individual barrels regularly to track how each is developing before deciding on the final blend.
The color is a rich amber. On the nose, vanilla leads, joined by candied fruit, orange marmalade, quince, and pear. The palate carries that same fruit character into a long, complex finish marked by warm spice and well-integrated oak.
