Apologue was founded in 2017 by Robert Haynes and Jordan Tepper in Chicago's Pilsen neighborhood, with a focus on building bitter liqueurs around regional American ingredients rather than the imported botanicals typical of Italian amari. The company operates as a Certified B Corporation and sources much of its produce from independent Midwest growers, including Growing Solutions Farm and Coldbrook Farm. Persimmon, the centerpiece of this bottling, comes from Twin Tykes, a multigenerational family farm in Indiana. The brand positions the liqueur as a homegrown alternative to Campari and similar Italian bitters, built for use in classic cocktails as well as on its own.
The base is a non-GMO neutral grain spirit, into which the producer macerates American persimmon pulp alongside hibiscus flower, cinchona bark, gentian root, rhubarb root, ginger root, green cardamom, cinnamon, spearmint, and both sweet and bitter orange and lemon peel. The persimmons themselves are a native American variety, roughly tomato sized, prized for their honeyed sweetness balanced by natural tannin. The liqueur is finished with organic cane sugar, and the company emphasizes transparency in ingredients, listing everything that goes into the bottle.
The color is a vivid garnet, close in hue to a classic Italian amaro. On the nose, spice and citrus lead, while the palate brings a piquant bite of gentian and bitter orange alongside the honeyed character of persimmon, which registers more as an undertone than a dominant flavor. Rhubarb-like acidity lingers into the finish. It works well over ice, in a spritz, or as a Negroni variation, and pairs nicely with aged cheeses drizzled in honey or a plate of charcuterie.
