Bittermens was founded in 2007 by Avery and Janet Glasser, whose small batch bitters have since become fixtures behind bars across the country. The company built its Hellfire Habanero Shrub around a specific problem they identified in spicy cocktails: infusing peppers directly into a base spirit tends to lock a drink into a single flavor direction, while dropping in standard hot sauces built from peppers, vinegar, and salt often throws off a cocktail's balance entirely. Their solution drew on the shrub, a vinegar based fruit syrup with roots in colonial era drink making, reworked here around chile heat rather than fruit sweetness. Production now takes place in New Orleans, one of several cities the Bittermens team has called home over the years.

The shrub is built on a base of alcohol and red wine vinegar, fortified to help extract flavor from the habanero peppers and other spices at the heart of the formula. Apple cider, elderberries, paprika, and vanilla round out the blend, along with citric acid and salt, all concentrated into a formula meant to be used by the drop rather than measured in ounces. That concentration lets bartenders introduce real, controlled heat into a drink without diluting or overwhelming its other components, the way a splash of conventional hot sauce often would.

The color is a deep reddish brown. On the nose and palate, a tangy vinegar lift comes first, followed by warm baking spice and vanilla, before the habanero itself arrives: fruity, floral, and distinctly hot, fading cleanly rather than lingering.
