C. Cassis is a small-batch blackcurrant liqueur made by Rachael Petach in Rhinebeck, in New York's Hudson Valley. Petach first fell for cassis while volunteering on organic farms in France, then returned home to build her own version using blackcurrants grown in the region. The project sits within the broader revival of American blackcurrant growing, a crop that was effectively banned nationwide for a century after being identified as a carrier of a disease threatening pine timber.
C. Cassis begins with lightly fermented New York state blackcurrants rather than the simple maceration used in many traditional French versions, giving the base liqueur more depth before it is blended with clean distilled spirit. The recipe is rounded out with wild honey in place of refined sugar, along with lemon verbena, cardamom, bay leaf, and citrus rind, all handled in small batches at the producer's own Hudson Valley production space.
The liqueur pours a luminous ruby color and delivers tart, earthy blackcurrant character layered with subtle herbal notes from the verbena and cardamom. A touch of honey rounds out the edges without pushing the liqueur into heavy sweetness, leaving a bright, refreshing profile that still carries real complexity.
