This liqueur begins with cocoa beans, often sourced from West Africa, which are distilled to extract a colorless cocoa concentrate rather than processed for the deeper, browner extract used in dark crème de cacao. DeKuyper uses low-pressure distillation at reduced temperatures, a method meant to preserve fresher chocolate character rather than the heavier, cooked flavor that can come from high-heat extraction. The concentrate is then blended with neutral spirit, water, and sugar, along with a touch of vanilla, to produce a liqueur that adds real chocolate flavor without introducing any color to a finished drink.
