Heering was founded in 1818 in Copenhagen by Peter F. Heering, a young trader in colonial goods who saw potential in an old cherry liqueur recipe passed to him by his former employer's wife. The liqueur quickly became a favorite cargo item for ship captains, traveling from Copenhagen to ports as far away as Calcutta, Shanghai, and Jakarta, and building a global following long before modern distribution existed. Today it is still made according to that original family recipe, making Heering the world's first commercially produced cherry liqueur and among the most decorated in its category, now under the ownership of Dutch group De Kuyper.

The liqueur is made by steeping lightly crushed Danish cherries, traditionally Stevns cherries, along with a blend of spices in a neutral grain spirit. This infusion is then cask aged for up to five years before being sweetened, a slow process that builds the liqueur's depth and layers of flavor. It contains only real cherries and natural botanicals, with no artificial flavoring or added coloring, keeping the recipe close to its nineteenth-century roots.

The liqueur pours a deep, dark ruby red. On the nose it shows stewed cherry and cherry jam with woody, spicy undertones and a faint hint of almond. The palate is syrupy and rich, echoing stewed plum and cherry jam, with a lingering fruit tartness that carries into a subtly spiced finish.
