Herbsaint Legendre Liqueur 750ml

Herbsaint traces to 1934, when New Orleans apothecary J. Marion Legendre introduced an absinthe-style spirit shortly after Prohibition's repeal, drawing on techniques he had learned while stationed in France during World War I. He originally called it Legendre Absinthe, though the recipe never contained grand wormwood, the plant central to true absinthe, and federal regulators soon forced him to drop the word "absinthe" from the label, leading him to rename it Legendre Herbsaint. The Sazerac Company acquired the brand in 1949, and in 2009 reintroduced Legendre's original 1930s formula as Herbsaint Original, restoring its higher, intended proof.

Herbsaint Original is made by macerating fresh herbs, primarily star anise and fennel, in neutral spirits, which are then distilled and blended with additional botanicals rather than relying on essential oils. That fresh-herb approach gives the liqueur a deeper, more layered anise character than lighter commercial anise spirits, and it is bottled at a robust 100 proof, matching the strength Legendre originally intended.

The liqueur pours a warm amber. The nose opens with concentrated anise and fennel, backed by green herbal notes and a touch of bitterness as it breathes. On the palate it is bold and dry, dominated by licorice and anise, with a lingering herbal complexity that carries through the finish.
