Irish Mist traces its origins to 1947 at the Tullamore Distillery in County Offaly, where Desmond Williams found himself with surplus stocks of whiskey during a difficult era for Irish whiskey sales. Williams came across an old manuscript describing heather wine, a honeyed spirit that Irish chieftains and nobles were said to have enjoyed for centuries before the recipe was lost in the upheavals of the 1600s. He adapted that tradition into a whiskey-based liqueur, and Irish Mist became the first liqueur ever commercially produced in Ireland, a recipe the brand says has remained unchanged since its debut.

Irish Mist is built on a base of aged Irish whiskey blended with natural honey drawn from heather and clover sources, along with a proprietary mix of aromatic herbs and spices. During production, the whiskey is combined with other Irish spirits to form the base, which is then infused with the honey and botanicals, allowing the herbs and spices time to macerate and release their essential oils before the liqueur is sweetened, diluted to proof, and bottled at 35% ABV. The result is a deep amber, almost chestnut-colored spirit that carries the character of Irish whiskey without losing its own distinct identity.

On the nose, sweet honey and warm spice lead, backed by dried fruit and subtle citrus. The palate is silky and rich, layering honeyed sweetness over the soft warmth of whiskey, orange zest, and a whisper of cinnamon, finishing long and mellow. That warmth makes it a natural base for a hot toddy, and it also shines in an Irish Mist old fashioned, built simply with a twist of orange peel.
