Sourced from historic vineyards in Jerez de la Frontera, the NV Obispo Gascon Palo Cortado merges the lighter structure of aged Amontillado with the deep oxidative richness of Oloroso, creating a fortified wine that adapts seamlessly across courses and occasions.
The palate opens with crushed walnuts, dried fig, and candied orange peel, quickly joined by savory layers reminiscent of cured ham, toasted barley, and a restrained whisper of espresso. Medium to full-bodied with a textured frame supported by bright underlying acidity, it leaves a clean, unusually long finish that cycles through roasted chestnut and citrus pith.
Serve slightly chilled at 12–14 °C to preserve its aromatic lift. It pairs reliably with aged mountain cheeses, marcona almonds, or charcuterie selections heavy on prosciutto and pickled olives.
